Vegetarians, please be aware that vegetables are almost impossible to obtain in rural Tibetan villages; therefore most of the dishes prepared for the Better Schools team at the worksite will contain meat and meat products.  Due to the limited size of cooking facilities in a village home and the limited capacity of our cooks, it is impossible to provide a separate menu for vegetarians.  Non-meat protein foods such as tofu and eggs do not travel well or keep well, and cannot be carried in large quantities. We've also found that eating meat is important for maintaining energy levels when doing hard physical work at high elevation for sustained periods.  In our experience, vegetarians do not do well at high elevation - they are more prone to illness than non vegetarians.    If you insist on adhering to a vegetarian diet during your stay on the Tibetan plateau, we suggest that you to bring a supply of supplementary food, especially high-protein snacks, to maintain good health during the program.
